Cedarlane Natural Foods
Developed all Dr. Sears Zone Diet Meals including specifications; Supervised Start-up of products. Developed products and completed specifications including manufacturing procedures for over 30 RTE (Ready To Eat) meals, fresh salads and other deli case items. Made numerous presentations to clients including Wal–Mart, Sam's Club, Kroger's, Safeway, Food for Less and Ralph's. Converted small batch recipes of soups from Fresh Choice Restaurants to production formulas. Supervised scale–up production.

Blossom Foods
Developed recipes, prepared concept samples and made presentations of products designed for patients with swallowing disabilities.
Completed production formulas for 25 products.
Currently working closely with manufacturers during scale–up of items.

Albertsons
Developed food products for the premium Essensia line including
pasta sauces, salad dressings, salsas and granola bars.
Directed manufacturing start-ups. Products currently available
throughout the United States.

Wolfgang Puck Food Company
Developed various pasta, chicken and beef
entrees for this well-known celebrity chef. Products were
introduced into the marketplace in spring, 1998 and are available
in retail stores nationwide. Reformulated products to reduce
cost. Supervised production at manufacturing facilities. Assisted
plants with scale-ups.

Gallo Salame, A Division of Sara Lee
Developed seven concepts and issued production
specifications for Deli d'Italia refrigerated entrees. Sourced
ingredients. Developed and issued vendor specifications. Inspected
production facilities of suppliers. Supervised all phases
of production.

Oberto Sausage Company
Developed flavors for new Jerky products.
Made customer presentation to National Grocery Store Chain.
Products currently available throughout the United States.

FIS, L.J. Minor's, A Nestlé Division
Developed formulas and prepared various soups,
sauces, meat fillings, marinades and center-of-plate products
for existing and new customers. Continuously creating products
using newest ingredients. Assist with customer presentations
both with foodservice and industrial accounts. Made presentations
for TACO BELL, POPEYES,
TGI FRIDAYS, OREIDA, NORPAC AND J.R. SIMPLOT. Work with various
research groups on flavor building techniques. Prepared products
for National Institute of Food Technologists and Research
Chef Association food shows.
Culinary Brands, A Nestlé Division
This company prepared Sous-Vide products.
Converted Research & Development specifications to product
formulas complete with processing methods. Streamlined all
existing production formulas to increase efficiency and to
reduce cost. Studied and documented time and temperature relations
on Sous-Vide products.

SupHerb Farms
Develop new products like herb rubs, pestos
and marinades on a continuous basis for foodservice and industrial
customers. Assist with customer presentations and made presentations
for KRAFT FOODS. Prepared products for National Institute
of Food Technologists and Research Chef Association food shows.
Developed and prepared trendy shelf stable tomato sauces for
Hunt's.

Darifair Foods
Develops various compound butters and cheese
sauces for use with meat, poultry, fish, vegetables and starches.
Develops and prepares new desserts which are shown to national
restaurant chains, grocery stores and distributors. Prepares
complete menu ideas incorporating Darifair ingredients and
makes presentations to national restaurant chains including
WENDY'S, OUTBACK STEAKHOUSE, DONATO'S, RUBY TUESDAYS, APPLEBEES
AND CHILIS. Continuously working with the technical staff
to create new refrigerated products. Prepares products for
National Research Chef Association show.

Aidells Sausage Company
Developed and prepared prototype sausages
for this well-known sausage company. These refrigerated products
are available in Club stores, retail grocery stores and in
foodservice. Worked with sausage makers.

Richelieu Foods
Create and produce concepts for national
grocery store chains to be sold in the deli cases. Write complete
manufacturing specifications. Assist with production scale-ups.
Represent company at customer presentations including ALBERTSONS,
MEIJERS AND JEWEL'S.

Copeland Enterprises, Diversified Foods
Designed and implemented Research & Development
and various production monitoring forms. Interviewed and hired
Research & Development chefs. Assigned projects and supervised
staff of five Research & Development chefs and support personnel.

which are mostly for national restaurant chains. Supervised
co-packers for products produced at California facilities.

California Rice Growers Association
Developed the first Rice Bowl concept for
this rice grower cooperative. Assisted plant with manufacturing
start-up.
Yogurtèsse, Inc.
Headquartered in San Francisco, Yogurtèsse
owns a manufacturing patent to produce an all natural, dairy-based
fat replacer. Developed products using this unique product
for customers like CLOROX, WEIGHT WATCHERS, STEAK AND ALE,
WOLFGANG PUCK, T. MARZETTI and CALIFORNIA PIZZA KITCHEN over
the last three + years. Organized and prepared products for
the National IFT show the past two years and worked the booth.
Interacted directly with customers assisting them with technical
questions regarding this product. Assisted plants during scale-ups
and test runs.
